Le Pas de la Mule

The ‘Pas de la Mule’ plot is planted with very old Grenache growing on a slope at the foot of the Castle of Quéribus. This is a wine with a personality and a complexity that few terroirs across the world can produce.

Description

Winemaking techniques

Harvesting by hand in crates at perfect ripeness. Grape sorting on a sorting table. Before alcoholic fermentation, we perform pre-fermentation cold maceration for 4-5 days at 9-12°C to extract the aroma precursors, tannins and anthocyanins. Once alcoholic fermentation is complete, we create the wine. Matured for 12-16 months in new 600-litre French oak barrels. Each grape variety is matured separately.

Tasting notes

A beautiful, intense garnet red colour. The range of aromas focuses on black fruit, particularly plum and brandy, and is also enhanced with touches of oriental spice and elegant wood (mahogany, cedar). Made from fully ripe grapes, this wine offers huge concentration with a very refined framework of tannins. On the palate it reveals complex notes of nutmeg, juniper, undergrowth and a hint of citrus. The signature clay and schist terroir is expressed in the harmonious, subtle finish.
