Harvesting by hand in 15kg crates, cold storage, sorting table, fermentation with native yeast. Half of the batch in ovoid concrete tanks and the other half in French oak barrels for subtlety and complexity. Maturation on fine lees for 3-4 months.
Pale, vibrant, bright pink. Tart tropical fruit, white flowers, dulce de leche with a base of red fruit and hazelnut. Animated, broad and expressive. Balsamic and fresh notes offer a beautifully lingering finish.
