It is fermented traditionally at between 25° and 30°C with daily pumping over and rack and return at the beginning of fermentation. After alcoholic fermentation, the wine undergoes maceration for around 15 days with lees stirring to enhance the volume and richness on the palate. Maturation: the wines are matured for 8 to 10 months in 225-litre third-fill French oak barrels, thus retaining the wine’s vegetal character and incorporating subtle oak notes. This maturation in barrels provides harmony and roundness.
Ruby red colour with hints of cherry. Complex with a mixture of red berry and spice aromas, plus a hint of black pepper. Some delicate chocolate and coffee notes from maturation in oak barrels. A well-structured, complex wine with pleasant tannins that add softness and a lingering finish. The spices join forces with toasted notes and the red fruit characteristic of Malbec.
